GREEN TAGLIATELLE IN A CREAM AND CELERIAC SAUCE

PREPARATION TIME: approx. 30 minutes (plus cooking time)

SERVES 4

500 g celeriac

salt

3 tbsp lemon juice

250 g tagliatelle

100 ml milk

100 ml whipping cream

75 g Gorgonzola

freshly ground pepper

grated nutmeg

75 g thinly sliced

Parma ham

100 g black olives, pitted

1 Peel, wash and coarsely chop the celeriac. Bring a large saucepan of water to the boil with salt and 2 tablespoons of lemon juice. Put the celeriac in the water and return to the boil, then cover and cook for about 10 minutes until soft.
